They impart a refreshing citrus note to dishes, but with a more minty undertone than lemon zest and other citrus fruits. Both kaffir lime leaves and the zest are used in Thai cuisine. The leaves are added to soups and curries during cooking. They contain essential oils and have a strong aroma. The leaves are removed before serving.
